Mark Aubert grew up in Napa and winemaking was always in his blood. His resume is bonkers: he’s worked at Peter Michael and Colgin, and consulted for Bryant Family and Sloan. However, it was Chardonnay that captured his attention, not Cabernet, so when it came time to go off on his own, it was this white grape that became his focus. In an interview with Wine Spectator, he said “You pick your battles, and I really wanted to fight Chardonnay. I love Cabernet, but we wanted to be at the top with Chardonnay—and I think we’ve done it.”
His CIX Vineyard is predominately planted with Chardonnay (Pinot making up the balance). He goes for what he describes as a “hedonistic” style: barrel fermented and aged with perfectly ripe fruit flavors and a full, round body. Yet it’s still incredibly elegant and in the tradition of great Burgundies, meant to age. Good thing you could score 3 bottles!
And speaking of opulent Chardonnay, Rombauer’s signature style has made it a leader in California for decades! Its oft-copied style set a precedence for California Chardonnay. But its legacy goes beyond this signature wine — Rombauer helped many of California’s now-top estates get their start.
